Description: Gentian, also known as Yellow Gentian, is a perennial herb belonging to the Gentianaceae family. It has a hollow and round stem, elliptical blue-green leaves, a spike of showy yellow-orange flowers, and thick rootstock. The top of the rootstock is surrounded by a cluster of rhizomes and the main taproot can grow as far as 3 ft into the earth. The root has an extremely bitter taste.

Part Used: Root Culinary Uses: Used in alcoholic beverages such as Vermouth, Angostora Bitters and Stockton Bitters. To make a tea, pour 1 cup boiling water over 1 teaspoon of Gentian root, cover and steep 3-5 minutes.
