DESCRIPTION
Black Pepper is from the dried unripe fruits of the Piper plant, a perennial woody evergreen climber, belonging to the Piperaceae family. It has a strong and woody stem, glossy leaves that are pale green, white flowers that are very minute and arranged spirally on fleshy peduncles, and the fruit (berry) grows in a grapelike cluster and is red when ripe. The most common of the peppercorns is the black, which is picked when the berry is not quite ripe, then dried until it shrivels and the skin turns dark brown to black. It is the strongest flavored of the peppercorns.
