Description: Artichoke is a perennial plant belonging to the Compositae (Asteraceae) family. It has a short rhizome and a strong, erect, stalk that is thickly covered in prickly leaves that taper into a flattened greenish or purple tip. The flower, resembling a large thistle, is rich blue in color. Artichoke leaves contain a wide number of active constituents, including cynarin, dicaffeoylquinic acid, caffeoylquinic acid, and scolymoside.
