Agar Agar is the powdered refined mucilage from several seaweeds and red algae from the Rhodophyceae family. It is colorless, tasteless and can absorb up to 200 times its volume of water to form a gel. Agar is commonly referred to as Chinese gelatin.

When dissolved in boiling water and cooled, Agar-Agar powder contains becomes gelatinous. It can be used as a vegetarian gelatin substitute for thickening soups, sauces, jellies and ice cream.
Agar-agar is approximately 80% fiber and shredded Agar has been used as a laxative. Powder form is not considered preferable for internal consumption.
