Description: Astragalus is a perennial herb belonging to the Leguminosae (Fabaceae) family. Astragalus is considered a powerful immune booster and it is one of the principal herbs used in Chinese Medicine. Cooking it with broths, rice, or beans has been considered a boost during illnesses that prevent one from eating normally.

Culinary Uses: Astragalus can be cooked into an immune building soup with garlic, onions, carrots, shiitake mushrooms and miso. To make a tea, steep 1 teaspoon of dried Astragalus root in 1 cup of boiling water for 3 - 5 minutes.
Medicinal Uses: Astragalus is considered to raise metabolism and strengthen digestion, and to be supportive during healing.
