Description: White Pepper is ground from the dried fully ripened fruits of the Piper plant, a perennial woody evergreen climber, belonging to the Piperaceae family. It has a strong and woody stem, glossy leaves that are pale green, white flowers that are very minute and arranged spirally on fleshy peduncles, and the fruit (berry) grows in a grapelike cluster and is red when ripe. Before drying, White Peppercorns are allowed to ripen, after which the skin is removed. This results in a lighter, smaller, and smoother skinned Peppercorn with a milder, less pungent flavor.
